The story begins in 2015. François, after studying enology, was the manager of Domaine Enclos de la Croix, in Lansargues (Hérault, South of France) which he converted to organic vinegrowing, and for which he optimized winemaking in order to create a range of red wines without added sulphites.
François also makes wine for several wine-merchants, he keeps on developing wines of Domaine Enclos de la Croix, and for a dozen other vinegrowers who trust him.
The activity moved in 2020 on the building of the former Cave Cooperative in Lansargues, close to Montpellier. François and his partner acquired this real concrete and steel cathedral, in order to renovate it completely, to get the latest winemaking technologies, in a 100 year-old place.
On the strength of this experience, he then settled as a wine-merchant, with the aim of connecting grape producers and wine consumers, based on a network of distributors all over the world.
Very quickly, he created his own range of wines. The principle is to link partnerships with Languedoc winegrowers which, on its advice, will make every effort to obtain the most beautiful grapes. At the time of the harvest, these grapes are bought and then vinified by François in his cellar in Lansargues. The wines are bottled and then sold in Europe, America and Asia.
In 2024, more than 200,000 bottles were produced. The range of wines, all certified organic, is modernly imagined to enhance an ancestral know-how.
Animal used since the dawn of time in viticulture, the sheep is back in force in the vines for the past decade. This is called eco -movement. What could be more formidable than these woolful and affectionate mowers, which hold clean vines! We wanted to pay tribute to them, as well as to the winemakers who lent themselves to the exercise.
In mythology, the Astrée and Céladon shepherds watch over their herd. These two wines are the "guards" of the previous range.
This resolutely southern accent is the result of the assembly of traditional grape varieties ...
